• 3 boneless skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 8 oz mozzarella cheese
  • 1 500ml can crushed tomatoes
  • 1 clove garlic, minced
  • 1 tbsp parsley
  • 2 tbsp oregano
  • 1 tbsp olive oil

Well guys, this baked chicken parmesan recipe is probably the best thing you’re ever going to get from me, so I might as well quit now. Just kidding – but seriously it’s so good. It’s definitely not a calorie friendly recipe but who cares about that when it taste so good. I served this baked chicken parmesan recipe next to my Brussel Sprout Salad and the combination was so yummy, it was quite the Italian themed night!

Directions for my Baked Chicken Parmesan Recipe w/ homemade marinara

I want to start by saying that marinara sauce from a jar will work just fine here. I wanted to go all out because it was a special occasion, so I did. However we’re all about budget friendly meals here so homemade marinara is not required. (That being said it’s a really cheap and easy marinara recipe so don’t hold back.)

Preheat your oven to 350 degrees. In a pan over medium heat, warm olive oil and add in 1 finely minced garlic clove. Pour in crushed tomatoes, add in your parsley and oregano (really, to taste) and cook that sucker down. When you start out your sauce should be pretty liquidy so continue to simmer your marinara until it’s thick with cute little tomato chunky’s.

Woo hoo! See how quick and easy and cheap it  is to make marinara? No excuses, college kids!

Onto le poulet … wait we’re going Italian here … onto il pollo

Mix panko and parmesan together in a bowl, whisk eggs in a separate bowl. Dip a chicken breast into your eggs, then coat in breadcrumbs. Repeat! Always repeat. Do it as many times as you want but get a nice thick layer of panko and parmesan on there.

*p.s You can use the cheap crap parmesan, sorry Kraft parmesan – don’t feel like you have to buy a thing of fresh parmesan, we’re poor people here.

Lay your chicken in a baking dish. Pour over your marinara sauce. Slice an 8oz mozzarella ball (that’s what I used, it’s easiest) into 6 slices. Lay 2 slices on top of each chicken breast. I know that’s a lot of cheese, but trust me it’s so worth it.

Bake for 40 minutes – 1 hour. I baked mine for an hour because they were really thick breasts (giggity?)
