• 3/4 cup all purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup butter or margarine
  • 1/4 cup unsweetened apple sauce
  • 2 large eggs
  • 1 1/2 lemons
  • 1 cup powdered sugar

Lemon Brownies – I know what you’re thinking. If it doesn’t have cocoa powder or chocolate of any variety how can you call them brownies? Because they’re made like a brownie, they look like a brownie – they feel like a brownie and most importantly they are just as moist and delicious as a brownie. Argument closed – here is my recipe for easy peasy lemon brownies!

Directions for Lemon Brownies

Preheat your oven to 350 degrees. Mix flour, sugar, butter and apple sauce in a bowl until combined. Add in eggs, 2 tablespoons of lemon zest and 2 tablespoons of lemon juice. Mix together until smooth and creamy.

Pour batter into a parchment or wax paper lined baking dish for easy removal. Bake for 30 minutes or until a toothpick inserted into the center of the lemon brownies comes out clean. Allow lemon brownies to cool, speed up this process by putting them into the freezer.

While your lemon brownies are cooling it’s time to make your lemon glaze. Sift 1 cup of powdered sugar into a bowl. Grate in approximately 3 tablespoons of lemon zest and squeeze in 3 tablespoons of lemon juice. Add more juice to your glaze depending on your desired consistency.

When your lemon brownies have completely cooled remove them from the baking pan and pour over half of your glaze, spreading it over the brownies evenly using a rubber spatula. Throw your lemon brownies in the freezer and allow the glaze to set. When the glaze has set, spread the rest of the lemon glaze over top and allow to set. Cut into 12 large brownies or 24 small squares.

The fact that these lemon brownies were made with applesauce was actually a complete fluke – a happy accident as Bob Ross would say. I went to grab the margarine and ended up only have 1/4th of a cup left so I substituted the other 1/4 a cup for apple sauce. It was definitely a win in my books. Apple sauce could probably be substituted entirely for the butter in this recipe – I will try that next time.
