1/2 a small yellow onion
2 green peppers
2 red tomatoes
2 jalapenos
1 tsp salt


Dice ingredients, mix together.
For best flavor let sit in fridge for a few hours before serving.

After Thoughts

This recipe was requested by my sister! I’m such a Mexican food freak so of course I jumped at the opportunity. The first night we ate this over chicken fajitas – so good. The next night I spread it over tortilla chips and added shredded cheese and cooked it to make nachos – yummy! I love love love this recipe. This is seriously the only way I could ever get my boyfriend Nick to eat tomatoes! He loved it 🙂
