- 3 boneless skinless chicken breasts
- 1 large tomato
- 3 tbsp pesto
- 6 slices mozzarella cheese
This pesto mozzarella chicken breast recipe has got to be my new favourite recipe for chicken. They are so quick to prepare and they’re ready in less than 30 minutes! If you’re adventurous you can make your own pesto, but our motto here on cheap-chef.com is CHEAP – FAST and DELICIOUS – so I bought a $3.00 jar of all natural pesto sauce from my local farm market.
Preheat your oven to 375 degrees. Start by cutting your chicken breasts length wise through the centre, lay them on a greased or foil lined baking sheet. Spread a thin layer of pesto over each sliced chicken breast. Bake for 10 minutes, remove from oven.
Slice your tomato in 6 thick slices, layer each pesto covered chicken breast with a slice of tomato and a slice of mozzarella cheese. Baked for an additional 5-10 minutes depending on the thickness of your chicken breasts.
They should come out juicy and delicious and ready to eat next to some pasta or if you’re going extra low-carb – zucchini noodles!
