• 4 cups kale

This Kale Salad Recipe is full of “super foods” which makes it SUPER good for you! I figured after sharing my Easy Yellow Cupcake Recipe earlier this week I had better follow it up with something healthy.

Super Food Kale Salad Recipe

Thoroughly wash and dry your kale, I let mine soak for a few hours in ice water. You can use whatever Kale you prefer (or whatever is on sale hehe.) I used curly kale which tends to be a little bit bitter but it was on sale. Roughly tear your kale with your hands into bite sized chunks. In a large bowl add in red pepper, dried cranberries and walnuts.

Toss with olive oil and balsamic vinegar or an Italian style dressing. Really any dressing works here so pick your fav and roll with it!

This Kale Salad Recipe makes a great hot summer day’s lunch or dinner! I love making salad on hot days so I don’t have to turn on the oven, especially in a condo without air conditioning!

What makes this super food kale salad recipe so super?

Kale has been a favorite of mine for a long time. I’ve made everything from Kale-Blueberry-Banana Smoothies to Kale Chip Nachos – I’m always looking for new and creative ways to incorporate this super vegetable into my diet. Kale is filled with antioxidants which help protect against cancer. Kale is extremely low calorie and high fiber, one cup of kale is only 36 calories. Kale also contains more iron than beef and of course is chalked full of vitamins.

Red bell peppers are FULL of vitamin C (more than 300% of your daily required intake!) They are also a great source of B6 and Magnesium and are packed full of antioxidants.

Walnuts are awesome because they are full of omega-3’s which are extremely important for your cardiovascular health. Walnuts can be a bit pricey so we like to buy them in bulk and store them in the freezer to maintain freshness.

Dried cranberries really don’t pack that big of a nutritional punch and are really just in the salad to give it some sweetness and color 🙂
