- 2 cups all purpose flour
- 1 + 1/4 cup sugar
- 1 tablespoon baking soda
- 1/2 cup unsalted butter
- 1 cup milk
- 1 teaspoon vanilla
- 2 eggs
This is such a great easy yellow cupcake recipe! I literally hate baking with a passion – but I refuse to use pre packaged cake mix so I went on the hunt for the easiest yellow cake recipe I could find and I stumbled across Reeni’s recipe for yellow cake here I had to give it a try in cupcake form.
Let me tell you these cupcakes give that Betty Crocker a run for her money…

The reason I hate baking is because it’s messy, time consuming, requires too much brain power and I really just tend to suck at it. The fact that these cupcakes turned out at all is because it’s such an amazingly easy recipe! Plus everything is done in one bowl so there’s minimal mess. (Unless you’re me, who ends up with batter on the ceiling.)
Preheat your oven to 375 degrees. Mix together flour, baking soda and sugar. Add softened butter, eggs, vanilla and milk. Mix, with your hand and a spoon obviously because who can afford a stand mixer? Please.
Looks good right? Don’t eat it you’ll get salmonella.
Okay, you can eat just a little bit.
Pour batter into cupcake pan and bake for 20-25 minutes.
Wait for these to cool and then you’re free to ice them. I suck at icing things so I bought one of those fancy icing decorating thingies at the grocery store, and yes I bought the icing because baking the cupcakes was enough for one day. The directions say to use baking powder, but the ingredients list says baking soda. Which is correct?
