I really don’t understand people who don’t have a sweet tooth. I’m sorry, but I don’t. I could sit down and literally eat an entire chocolate cake in one sitting – but I won’t, because that would be bad. (Unless you put me in a room alone with a chocolate cake, then I definitely would.) But this recipe isn’t for cake – however I do have a cupcake recipe you may want to check out if you’re into that.

My favourite 7-11 treat is not a Slurpee or chocolate bar, it’s their white chocolate macadamia nut cookies. That’s right, my favourite “fresh baked” cookies come from a gas station. They come in a pack of two and they are always so fresh and soft and melt in your mouth delicious…. mmm.  So when Mike proposed we make cookies one evening I had to try and make my own white chocolate macadamia nut cookies. That’s a friggin’ mouthful!

These white chocolate macadamia nut cookies are so yummy and pretty easy to make! You probably already have most of the ingredients on hand. Feel free to add less nuts and more chocolate as you see fit.

White Chocolate Macadamia Nut Cookies

White Chocolate Macadamia Nut Cookie Recipe

Ingredients

1 cup butter, softened
3/4 cup light brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup macadamia nuts
1 cup coarsely chopped white chocolate

Directions

Preheat oven to 350 degrees F

Cream softened butter, brown sugar and white sugar together in a mixing bowl. Beat in the eggs individually then stir in vanilla extract. Gradually pour in flour, baking soda and salt. Stir in macadamia nuts and chopped white chocolate.

Roll cookies into teaspoon sized balls and drop onto lightly greased baking sheet. Bake for 12-17 minutes, until cookies are golden brown.

These cookies cost around $25.00 for 3 dozen, which doesn’t sound that cheap but like I said earlier you probably have most of these ingredients already, plus you can always make a smaller batch. It’s dangerous to have 36 cookies in your house at once… especially when you’re going through a stressful time and the cookies are 155 calories each. Just be careful is all I’m saying!
