Mmm guacamole – could you BE more delicious? Sorry, I’ve been watching a lot of Friends lately. I absolutely love guacamole, and this is a super easy guacamole recipe. Anyone can whip this up in less than 20 minutes. Not to mention it’s A) Healthy and B) Cheap – which are of course the two main things I look for in a recipe.
I understand for a lot of people avocados are crazy intimidating and you end up nearly killing yourself when you try to remove the pit. So here’s my best demonstration on how to remove an avocado pit safely.
1. Slice your avocado all the way around
2. Twist and pull the avocado apart (kind of like an oreo cookie.)
3. Hit your knife hard into the pit.
4. Turn your knife with pit attached and pull
5. Voila! You kept all your fingers. Congratulations.
If you slice your avocado while it’s still in the skin you can easily scoop out the chunks with a spoon right into your bowl. You are the master of your guacamole so leave it chunky or mash the crap out of it – it’s all up to you, my friend.
I’m not going to lie, my guacamole making happened to coincide with Super Bowl Sunday but I assure you, this was not the reason for making guacamole. I don’t watch sportsball, nor was I cheering for the seapats or patrihawks. If it doesn’t involve an ice rink and a puck, I don’t care. Sorry America.
Definitely omit the cilantro if you want. It changes the guacamole completely and a lot of people can’t stand cilantro. It’s still great guac sans cilantro. I like how fresh it makes everything taste so I added about 2 tbsp of it.
Before you comment that my chips have gone bad they haven’t! Theses are kale and flax tortilla chips I bought from Costco – they are seriously the bomb diggity and I feel way better about eating these than regular tortilla chips.
