What You’ll Require

1-1/2 cups brown rice, uncooked
1-1/2 cups chicken broth
1/4 cup mayonnaise/Miracle Whip
1 Tbsp. chili powder
1-2 small  boneless skinless chicken breasts
1 tomato, chopped or can of diced tomatoes

Make It

Add broth, rice, tomatoes, miracle whip, and chili powder together in a deep pan. Mix together and bring to a boil.

Add chicken breast and simmer on low heat for 25 minutes.

OPTIONAL: top with cheese.
This recipe was the perfect blend of cream from the mayonnaise and spice from the chili powder. I would definitely make this again, plus I used home made chicken broth – which of course made it even better! Let me know in the comments if you try this out and what you thought, I’d love to hear it!
