I experimented today. Decided to take a leap of faith and attempt something I’ve never tried before and it actually turned out pretty amazing. Empanadas! I got the idea from watching The Chew on ABC and decided there had to be an easier way to make this dough without 1000 ingredients, turns out there is. There always is!

 

INGREDIENTS

Ingredients to make easy empanadas

 

 

1 1/4 Cup All Purpose Flour
1/2 tsp Granulated White Sugar
1/2 tsp Salt
1/4 cup Milk
1/4 cup Butter
1/2 Large Egg

*These ingredient amounts make 8 small empanadas, enough to feed 2 adults.*

 

Directions

Combine your flour, sugar, and salt in a large bowl and mix.
Add in your milk, butter and egg and knead into a ball.

Divide your dough into 8 sections, roll dough into a ball using your hands.
Space balls apart on a greased baking sheet. Squish your balls down using the palm of your hand, now you’re ready to stuff them with whatever your heart desires!
I put Nick’s favorite thing – shredded BBQ chicken, yum.
Then just fold them over and press the edges down with a fork – mine were a bit over stuffed so I couldn’t completely close them.

Place into the oven at 375 degrees for 25 minutes or until golden brown.

These were awesome. Mine with the stuffing were 750 calories for 4, but it all depends what you stuff them with.
That’s the beauty of empanadas, you can fill them with whatever your heart desires and they will be amazing no matter what!
